Keto food porn for one

I'm single (anyone know any nice, single men? Haha maybe this blog can double as my own personal dating site). Cooking for one is not much fun. Who wants to cook a single meal every day? Not me that's for sure.

I used to cook a meal on the weekend and eat it every day that week. But that can get a bit boring. Recently I've started doing a big cook up when I have time on a weekend and freezing food. If I can I'll cook two, three or four different meals and portion them up into say 6 to 8 serves and stock my freezer.

I went out and bought new glass containers that are the perfect size for one serve of food, and got rid of my ones that were too big. This means I can fit more meals in my freezer, have more variety, and I'm also not over filling the containers and eating too big a serve (thanks Marie Kondo for the inspiration).

I'm loving having more variety, and each night I just pick out whatever meal I think I will feel like the next day. Usually I accompany the meals with some veggies or salad. Or cheese (mmmm cheese).

I try to vary what I make, so I will go months between cooking the same meals. This way I can eat it 6 times over 5 or 6 weeks and not get sick of if and then come back to it in a few months time at another cook up.

This can take a while on the weekend to cook that many meals and freeze them all, but it is well worth it for the 3 or 4 weeks where I don't have to cook at all. I go interstate to visit my family and friends a lot as well so it makes things so much easier knowing I have meals home waiting for me and I don't have to cook or shop the second I get home.

Another benefit to this is that there are no excuses. You don't need a cheat meal when you've already got a heap of delicious meals in the freezer waiting to be eaten with no effort. This has been my saviour.

Weekends are my time for quick and easy meals. I absolutely love cooking a steak with mushrooms and broccolini on the weekend. And today I'm going to use my new air fryer for the first time and make pork belly and sweet potato fries, I can't wait.

Today's cook up was all new recipes for me. I made 8 serves of curried sausages, 8 serves of bacon ranch chicken casserole and 8 serves of chilli casserole. I'm excited to get to try them all during the week
